This sheep  "little camembert" is made from carefully selected raw milk, and it is becoming more and more flexible as it matures. Delicate flavors of raw milk affirm themselves with time without becoming too strong.

This cheese goes really well with white wines such as Cassis blanc or Bandol blanc

Located on the Causse Mejean in the small village of Hyelzas, the Hyelzas dairy, offers a wide range of raw milk cheeses divided into five groups according to the characteristics of their production (soft, mixed-rimmed, semi pressed, lactic, whey)
