Our Coeur de Chèvre Cendré

Established in Châtillon-sur-Cher, in the centre of France, the Hardy family has made of farmstead goat cheeses its specialty. The dairy collects fresh cheeses from about 30 local producers, and then carries out the whole maturation process. The dairy mainly offers 3 PDO products (Sainte-Maure de Touraine, Valençay and Selles-sur-Cher), but spread its range of products to other rarer goat cheeses.

Did you know that ?

Cœur de Chèvre is sprayed with a powder made from oak tree ashes, at the same time it gets salted. Thanks to its heart shape, the cheese benefits from a rather large rind surface, which guarantees a deep and qualitative ripening.
